I had some collards so thought I'd try a recipe from Vegan Soul Kitchen--Citrus Collards with Raisins.
And I made an old standby that I believe came from one of Rachael Ray's shows. It was supposed to be zucchini and yellow squash with mint, but of course I didn't have any mint! But it's still a good dish, even without that little extra zing.
The finished meal--and we really enjoyed it. The veggies were great and the Gardein dish was very enjoyable. I'll be buying more Gardein products when I run across them!
