One of Mr. GV's favorites is Curried Red Lentil Soup, from The New McDougall Cookbook, by Dr. John McDougall and his wife Mary. It's a great cookbook, and almost all the recipes we've tried from it have been hits.
If you've never cooked wth red lentils before, you're in for a treat. They cook quickly, and don't need to soak like other beans. It may not look like a whole lot in the picture below, but it's a very filling soup.
Your vegan two cents: Are you a lover of soups? What's your fav?

My favorite changes regularly, but right now it's the Arabian Lentil and rice in Appetite for Reduction.
We definitely love soups in this household! My husband's favorite - beyond compare - is Donna Klein's Tuscan White Bean Soup. I skip the oil and sauté the scallions in broth. Definitely a must try - so simple, but so good!
Soup is my all time favourite thing. If you've heard me say that before I apologise. But it's true. I would have soup for breakfast, lunch and dinner (and frequently do).
HURRAH! for autumn.
